Orange Pushups (Like Orange Julius)

I got this recipe for orange push-ups.  I love it!!!  I really like that the recipe calls for the hawaii's own mango orange "juice" because a) it's cheaper and b) it's a little different than orange julius.  But I would cut the sugar down probaby in half.  It's really sweet if you don't.  Anyway, here it is, and the kids will love it!


1 can Hawaii's own mango orange concentrate, slightly thawed
1 cup milk
1 cup sugar- I reduced it
1/2 teaspoon vanilla extract
2 cups ice

You can drink it right away, put it in a bowl and freeze it for orange sherbet later, or put them into ice cube trays for little Popsicles for the kids.  Hope you like it!

Cafe Rio Pork Salad or Burritos

So I made these burritos I found on pinterest.  I think they were really good.  I didn't make the beans the way they did, I just added cumin to them.  But I made their rice recipe and their pork.  I make their sauce to go over the burritos (enchilada style) but I wasn't a big fan of that.  I also made the tomatillo dressing that Michelle uses.  It was delicious!  I'll post the blog where I got it.  Next time I'll cook more than just two pounds and freeze the rest.  I put a little bag of it in the freezer to see if it will be any good in a couple weeks, so I'll let you know how that goes.  Hope you like it!

Cajun Chicken Pasta

Ingredients:
2 boneless skinless chicken breasts (cut into small strips)
4 ounces linguini (cooked all dente)
2 teaspoons Cajun seasoning
2 tablespoons butter
1 green onion (thinly sliced)
2 cups heavy whipping cream
2 tablespoons sun-dried tomatoes (chopped)
¼ teaspoon salt
¼ teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
¼ cup parmesan cheese

Step 1: Place chicken strips and Cajun seasoning in a bowl, toss the chicken with the seasoning until the chicken strips evenly coated with the seasoning.
Step 2: In a large skillet over medium heat, melt butter. Add chicken and sauté the chicken for 5 to 7 minutes or until the chicken is fully cooked (the internal temperature has reached 165 degrees).
Step 3: Reduce heat to low. Add green onions, heavy cream, tomatoes, basil, salt, garlic powder, and black pepper. Cook until heated through. Pour over hot linguini and toss with parmesan cheese.
